Zuppa Toscana

Start this hearty soup in the morning and finish it off as your group arrives just in time for the finishing touches. Be sure to double the recipe for larger groups! Serve this up with a side of crusty bread and a bottle of red wine.

Serves 6

Ingredients

  • 1 lb of spicy Italian sausage

  • 8 slices of cooked bacon, diced

  • 1 medium yellow onion, diced

  • 32 oz of chicken stock

  • 2 cloves of garlic, minced

  • 5 large red potatoes, cut into 1/2 inch pieces

  • 1 cup of heavy cream

  • Bag of kale, de-stemmed

Recipe

  1. Brown Italian sausage over medium-high heat.

  2. Put sausage, onion, garlic, chicken stock, and potatoes in a crockpot. Cook on low for 6 to 8 hours.

  3. Make bacon sometime during the many crockpot hours.

  4. 30 minutes before serving, stir in kale and heavy cream.

  5. Serve with crumbled bacon on top and enjoy!
