White Chicken Chili

If warm hugs were a meal, this chili is exactly that. Cozy up with this flavorful white chili that even has a vegetarian option covered. Top off your bowls with avocados or jalapeño and serve with chips or cornbread.
Serves 6-8
Ingredients
1 lb chicken, boneless and cut into 1/2 cubes
1 medium onion, chopped
1 1/2 tsp garlic powder
1 tbsp vegetable oil
2 cans (15.5 oz each) great northern beans, rinsed and drained
1 can (14.5 oz) chicken or vegetable broth
2 cans (4oz each) chopped green chilies
1 tsp salt
1 tsp cumin
1 tsp oregano
1/2 tsp pepper
1/4 tsp cayenne pepper
1 cup sour cream
1/2 cup whipping cream
Recipe
In a large stockpot or Dutch oven, sauté chicken, onion, and garlic powder in oil until onion is soft.
Add beans, broth, chilies, and seasonings. Bring to a boil.
Reduce heat; simmer, uncovered for 30 minutes.
Remove from the heat; stir in sour cream and whipping cream.
Serve with toppings.
Vegetarian option: Switch out the chicken with jackfruit (canned, in water).
