Sloppy Joes + Optional Kale Salad

Who doesn’t love an excuse to have sloppy joes? This recipe is easy to double and quick to cook – pre-make your sloppy joe sauce mixture over the weekend to make your CG night a breeze! Ask your group to bring buns, toppings, kale salad or coleslaw, and cookies to round out this meal.

Serves 8

Ingredients

  • 2 tbsp butter

  • 2 lbs ground beef

  • 1 cup finely chopped onion

  • 6 large cloves garlic, finely chopped/minced

  • 1 15 oz can tomato sauce

  • 4 tbsp tomato paste

  • 1/2 cup brown sugar

  • 4 tbsp Worcestershire sauce

  • 4 tsp yellow mustard

  • 1 tsp onion powder

  • 2 tsp paprika

  • salt and pepper to taste (at least 1 tbsp each)

  • optional red pepper flakes for some heat

  • 1 package hamburger buns

  • Optional toppings: Sliced cheddar cheese, sliced dill pickles, hot sauce, fried or raw thin-sliced onions

Recipe

  1. In a large sauté pan, heat butter over medium low heat. Add ground beef, onion and garlic and cook until meat is completely cooked through, or until juices and fat are cooked off. Drain excess fat if there is too much.

  2. While meat is cooking, whisk together tomato sauce, tomato paste, brown sugar, Worcestershire sauce, yellow mustard, and seasonings in a bowl.

  3. Pour mixture over meat and mix well. Bring the mixture to a simmer. Reduce heat and continue to simmer for a few minutes until heated through.

  4. Serve with pickles and cheese and hot sauce.

  5. Optional: Brown hamburger buns in butter on a hot pan for some extra butter crunch.

Optional Kale Salad

Main Ingredients

  • Kale

  • Grated white cheddar

  • Your choice of toppings: Pepitas, pecans, apples, pomegranate, pear, dried cranberries, red onion

Dressing

  • 1/4 c. oil

  • Juice of one lemon

  • 1/2 tsp. honey

  • 1/2 tsp. Dijon mustard

  • 1 clove garlic, minced

  • Salt and pepper to taste
