Ramen + Optional Pork Belly

The perfect create-your-own-adventure meal. Follow the recipe below to create your own ramen broth and invite your group to bring the toppings. Get as fancy as you want (Pork belly! Soft boiled eggs!) or keep it simple with pre-made ramen and broth from the frozen food section, rotisserie chicken pulled off the bone, and whatever veggies you have in your kitchen. Enjoy with dumplings and dessert!

Serves 6

Ingredients

  • 1 tbsp sesame oil

  • 3 tsp grated ginger

  • 4 tsp grated garlic

  • 4 cups broth (chicken or vegetable)

  • 4 cups water

  • 1 oz dried shiitake mushrooms

  • 2 packages instant ramen (noodles only!)

  • 1/2 cup chopped scallions or chives

  • 2 cup chopped kale

  • 1 cup shredded carrots

  • Sriracha to taste

Recipe

  1. Heat the sesame oil in a large skillet over medium-low heat.

  2. Add the garlic and ginger; stir fry for 2 minutes or until soft and fragrant.

  3. Add the broth and the water. Bring to a simmer; add the mushrooms and simmer for 10 minutes or until the mushrooms have softened and the broth is flavorful.

  4. Add the instant noodles to the hot liquid and simmer for an additional 5 minutes or until the noodles have softened.

  5. Add the scallions and stir to combine.

  6. Remove from heat, stir in meat and toppings. Our favorites are: Egg, kale, shredded carrots, green onion, bean sprouts, fresh ginger, could do mushrooms, bok choy, fresh basil or cilantro, Siracha – the options are endless!

Optional Pork Belly Instructions:

Ingredients

  • 1 1/2 lb. slab boneless pork belly, skin-on

  • 1/4 cup kosher salt

  • 1/4 cup sugar

  • 1 tsp freshly ground black pepper

  • 1 cup sake

Recipe

  1. Preheat the oven to 350 degrees F.

  2. Sprinkle the belly with the salt, sugar and pepper.

  3. Throw the seasoned belly in a roasting pan and pour the sake over it.

  4. Roast for 1 hour 30 minutes, and then bring the heat up to 450 degrees F and let it caramelize. It should be tender but not mushy.
