Grilled Cheese and Tomato Soup

Lent 2016

For us, grilled cheese and tomato soup is the ultimate comfort food, bringing up warm memories of rainy days spent indoors with family and friends. We remember those times when we were too sick to get out of bed so a loved one brought this to us and sat beside us, warming both our bodies and our spirits. It’s our hope that as you eat this meal around a shared table with your Community Groups this week, that new memories would be formed while breaking bread and sharing stories with one another.

Ingredients

Grilled Cheese Sandwiches

  • 1 loaf of sourdough bread (sliced) 1 pound of sliced ham

  • 1–2 blocks of your favorite melty cheese (sliced)

  • 2–4 tablespoons of butter

Fresh Tomato Soup

  • 8 ripe tomatoes

  • 6 red bell peppers

  • 6 cloves garlic (peeled)

  • Extra virgin olive oil (for drizzling) 5 sprigs fresh rosemary

  • 4 sprigs fresh thyme

  • 1/2 cup vegetable broth

  • 1/2 cup tomato puree

  • 3 tablespoons apple cider vinegar 1 bunch of chives

  • Salt and freshly ground pepper (to taste)

Directions

Grilled Cheese Sandwiches

  1. Spread both sides of each slice of bread with butter.

  2. Layer the ham and cheese onto one slice of bread.

  3. Top with the other slice of bread and press it onto a hot skillet until browned and melty.

  4. Repeat until you’ve made however many sandwiches your Community Group can devour!

  5. Feel free to customize this by adding your favorite spreads or sandwich ingredients.

Fresh Tomato Soup

  1. Preheat the oven to 375°.

  2. Chop the peppers into quarters and remove the center. Slice the tomatoes and place onto a rimmed baking sheet with the bell peppers and garlic. Drizzle generously with olive oil and sprinkle with salt and pepper. Scatter the rosemary and thyme over the

    vegetables. Roast in the oven for 35–40 minutes.

  3. Transfer everything on the pan to a blender or food processor.
    Add the broth, tomato puree, and apple cider vinegar. Puree until smooth, adding more broth if necessary to reach desired consistency. Add salt and pepper to taste.

  4. Top with chives. Ladle into bowls and serve with the sandwiches!
