Foote's Famous Fajitas
Lent 2019
These easy fajitas are packed with flavor and can easily be made together during the first hour of CG so they are still warm. Ask others to bring sides of rice, beans, and a lime-infused beverage
Serves 8
Ingredients
Taco seasoning
(can substitute with store-bought taco seasoning)
4 Tablespoons chili powder
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon crushed red pepper
1 teaspoon dried oregano
2 teaspoons paprika
6 teaspoons ground cumin
4 teaspoons sea salt
4 teaspoons black pepper
Fajitas
4 chicken breasts (cubed)
2 bell peppers (chopped)
1 large red onion (chopped) 3 garlic cloves (minced)
2 tablespoons olive oil Tortillas
Grated cheese
Black beans
Other sides
Directions
1. Heat up skillet over medium high heat, add olive oil; wait until oil shimmers.
2. Add peppers and onions and cook until pepper is slightly soft and onion is slightly charred.
3. Add chicken and continue mixing until chicken is thoroughly cooked (usually 8 minutes).
4. Add taco seasoning and stir until thoroughly coated.
5. Turn down to low or off, and heat tortillas on separate skillet. Serve tortillas warm.
