Broccoli Cheddar Bacon Quiche

Breakfast for dinner! Great additions to this meal would be smoothies, fruit, yogurt, and granola. You can make the quiches together as a Community Group and let them bake during discussion time to enjoy after, or have some volunteers bring prebaked quiches to warm up at the start of Community Group.

Makes one (1) quiche | Serves 4-6

Ingredients

  • 1 store bought pie crust

  • 5 slices of bacon

  • 1 tablespoon olive oil

  • 1 garlic clove (chopped finely)

  • 1/2 onion (chopped)

  • 3 cups chopped broccoli

  • 1 cup cherry tomatoes (sliced)

  • 1 cup crumbled feta

  • 1 cup grated sharp cheddar

  • 6 large eggs

  • 3 large egg yokes

  • 1 3/4 cup heavy cream

  • 1 cup whole milk

  • 1 teaspoon salt

  • 3/4 teaspoon black pepper

Directions

1. Preheat oven to 325°.

2. Set your bacon on a large tray and bake in the oven.

3. Meanwhile, fry the onion in a skillet over medium heat until softened (~5 minutes). Add garlic and sauté for another minute. Add broccoli and cook until tender. Transfer to your pie shell.

4. In a bowl, whisk eggs, egg yolk, cream, and whole milk. Stir salt, pepper, chives, feta, and cheddar into the egg mixture and gently pour into the pie shell.

5. Bake the quiche in the oven until the top is browned (~1 hour).

6. Let cool slightly before serving then dig in!
