Lent Recipe: Sesame Ginger Noodles

These noodles offer all the flavors- sweet, savory, spicy, and most of all, umami. Everyone will have a task to share in the making of this flavorful dish.

Sesame Ginger Noodles

Feeds 8

Ingredients:
2 packs of Chinese noodles
4 tbsp soy sauce
4 tbsp unseasoned rice vinegar
4 tsp sugar
1 tsp toasted sesame oil
½ in - 1 in ginger thinly sliced or grated
4 cups shredded cooked chicken, beef or pork
4 scallions, thinly sliced
1 large cucumber, thinly sliced and halved
8 radishes, trimmed, thinly sliced
2 cups snow peas, steamed
2 cup cilantro leaves
1 Cup Mushrooms - shitake if available, cremini is also fine
chili oil to drizzle

Directions:
Whisk soy sauce, vinegar, sugar, and oil in a medium-sized bowl until sugar dissolves. Cook noodles according to package directions then drain. Combine noodles with sauce, chicken, scallions, cucumbers, radishes, snow peas, mushrooms, and cilantro. Drizzle with hot chili oil or sprinkle with red pepper flakes to add a bit of heat. Dig in!
