Lent Recipe: Broccoli, Cheddar & Bacon Quiche

Ending our Lenten Season with everyone's favorite- Breakfast for Dinner. Great additions to this meal would be smoothies, fruit, yogurt, and granola.

Broccoli, Cheddar & Bacon Quiche

Makes 1 quiche - feeds 4-6

Ingredients:
1 store bought pie crust
Or if you're feeling ambitious, make homemade crusts for your CG!

Filling:
5 slices of bacon
1 tbsp olive oil
1 garlic clove, chopped finely
1/2 onion, chopped
3 cups chopped broccoli
1 cup cherry tomatoes sliced
1 cup crumbled feta
1 cup grated sharp cheddar
6 large eggs
3 large egg yolks
1 3/4 cup heavy cream
1 cup whole milk
1 tsp salt
3/4 tsp black pepper

Directions:
Preheat oven to 325°F. Set your bacon on a large tray and bake in the oven. Meanwhile, fry the onion in a skillet over medium heat until softened (~5 min). Add garlic and saute for another minute. Add broccoli and cook until tender. Transfer to your pie shell. In a bowl, whisk eggs, egg yolk, cream and whole milk. Stir salt and pepper, chives, feta and cheddar into the egg mixture and gently pour into the pie shell. Bake the quiches in the oven until the top is browned ~ about 1 hour. You can make quiches together as a CG and let them bake during your discussion time to enjoy after, or have some volunteers bring prebaked quiches to warm up at CG.
